His La Vigne de Louis bottling comes from a plot of old vine Trousseau, named after Gahiers grandfather, who originally planted the site. The 2023 vintage is made with organic farming, native yeast fermentation, and no fining or filtration. The wine is aged in old foudres, without sulfur additions at
